They then remove the outer layer of the cherry to reveal the coffee bean inside. This bean is still covered in a sticky, sweet layer called the mucilage, which needs to be removed before roasting. The beans are then transported to a processing facility, where they undergo a thorough washing and drying process. This process removes the mucilage and ensures the beans are ready for roasting.
